Sweet, Savory Greek Yogurt Flavors

Comax Flavors, Melville, NY, developed a range of sweet and savory flavors to complement the creamy texture and broad consumer appeal of Greek yogurt. The new flavors include Purple Plum, Cinnamon Bun, Cucumber, Cherry Black Currant, and Baklava. Greek yogurt generally has a firmer texture than traditional yogurt; it also contains less fat and no whey, delivering a consistency between cheese and typical yogurt. It is commonly used in Greek cooking in dips and dessert toppings, but has a range of potential recipe applications.

Gladys Slovis, applications lab manager, Comax Flavors, commented: With its unique body, silky mouthfeel and satisfying richness, Greek yogurt offers the ideal vehicle to showcase our ability to create a wide variety of true-to-life flavors to suit a given product application. Even at 0 percent fat, Greek yogurts taste decadently rich, making them very suitable for sumptuous dessert flavors like Baklava and Cinnamon Bun. Its well within our powers to develop any number of concepts the skys the limit. Picture Cheesecake and Key Lime Pie, for example."

Slovis noted the company has worked to ensure the new flavors will work easily in Greek yogurt formulations, delivering more intense flavor notes than flavors used in regular yogurts, which are thinner in texture and have a lighter mouthfeel.
