SAN JOSE, Calif.--According to a new report by Frost and Sullivan (www.frost.com),the market for enzymes in food application markets generated $129 million in2000 and should top $160 million by 2007. The report, U.S. Enzymes in FoodApplications, analyzed major segments of the marketplace that use enzymes infood applications, including starch and sugar processing, and dairy and bakingapplications. It also evaluated market drivers and restraints, pointed out keytrends and provided revenue forecasts for each segment. "In an industrywhere investment in research and development form one of the cornerstones ofprofitability, companies are under pressure to focus on their corestrengths," said Girish Solanki, a Frost and Sullivan analyst."Mergers and acquisitions have decreased the number of market participantsand tightened competition."
