FEMA Approves New Flavor Chemicals

WASHINGTONThe Flavor andExtract Manufacturers Association (FEMA) granted GRAS (generally recognized assafe) status to three flavor chemicals: 2-Butylfuran, 2-Hexylthiophene and2-Methyl thiopropionate.

According to a release dispatched by Treatt plc, 2-Butylfuran(FEMA #4081) occurs in French fries, cranberries, boiled eggs, cooked beef andchicken, chicken fat, coffee, black tea, roast hazelnuts and peanuts and impartsfaint, fruity, sweet and wine-like notes; 2-Hexylthiophene (#4137) is found ingrilled and roast beef, cooked lamb, cranberries and various mushrooms, and issuitable for use as chicken and seafood flavors; and 2-Methyl thiopropionate isnative to Munster and Camembert cheeses and can be used to produce a ripe notein fruit and cheese flavors.
