SPRINGFIELD, Mo.DairiConcepts launched ' PARMPLUS, part of its new DairiFusion line of ingredients, the clean label, flavor intensified version of freshly grated Parmesan Cheese that enables flavor impact and cost efficiency in commercially prepared foods.

PARMPLUS comes in a freshly-grated format with a maximum moisture level of 32% and can be incorporated into most food systems without grinding or pre-processing. Applications include Alfredo and other white sauces, red sauces, soups, dressings, dips, pizzas, entrees and selected baked goods. It is free of phosphates, made from real Parmesan cheese and has a shelf life of 90 days at refrigerated temperatures.

The product was developed to combat fluctuating prices of cheese while accommodating consumer preferences in labeling. Sensory evaluations through DairiConcepts' Descriptive Analysis Panel verified the product has a more intense flavor than traditional Parmesan, because of this, PARMPLUS lowers standard cheese usage up to 25% while matching full-flavored Parmesan profiles.
