Probiotic Yogurt Receives High Taste-Test Ratings
ROSEMONT, Ill.--A new strawberry-flavored probiotic yogurt formulated with acid whey protein powder created by Dairy Management Inc. (DMI; www.extraordinarydairy.com) received high taste-test scores, according to DMI. The taste-test panel included frequent and sporadic yogurt eaters.
The yogurt was formulated with acid whey powder (AWP) from cottage cheese, which replaced a portion of the yogurts nonfat dry milk. Acid whey is rich in peptides and amino acids, which enhances the yogurt by acting as a prebiotic that stimulates the growth of healthy probiotic bacteria, thereby offering health benefits beyond basic nutrition, according to the company. DMI also stated other advantages to adding AWP to yogurt, which include upping its protein and calcium content and increasing predigested nitrogen, which can improve the growth and viability of helpful bacteria.
