The functional foods market is burgeoning. According to a 2014 report from Leatherhead Food Research, the global market for foods and beverages with a specific health claim was valued at US $43.2 billion in 2013, representing a 26.7-percent increase compared to 2009. As consumers increasingly seek the benefits of fortification, product developers are afforded the opportunity to innovate by providing functional benefits to a growing range of food and beverage products.
