Memphis barbecue sauce, applied to ribs and pulled pork, is similar to Kansas City sauce, but usually thinner, with a more-pronounced vinegar bite to it. But what really sets Memphis barbecue apart from its neighbors is its dry rubs. Meats, such as ribs, are rubbed with combinations of spices, then smoked. Sauces is then often served on the side.
