Food allergens are a topic of increasing interest and challenge within the food industry. Driving forces include consumer expectations for accurate labeling and FSMA requiring that food allergens be included as part of food safety compliance efforts. Prevention is a key industry objective going forward. Advancements in LC-MS/MS technology and its accessibility to the general food industry bring new alternatives for meeting the challenges that allergens present. LC-MS/MS brings increased specificity for monitoring allergens across diverse food and nutritional products and operations. Multiplex applications enable simultaneous measurement of many allergens in a single analysis and this can be leveraged into a more preventative program by looking for both expected and unexpected allergen in the same analysis cost effectively.
Register for this session today to learn how utilizing this technology can help you protect your consumers and your valuable brand.

Prior to joining Covance, Lawry lead a cross-functional team that leveraged activity based proteo-genomic work flows for the discovery novel IR mod of actions (MOAs) for transformation into commercial crops. Lawry joined Covance Food Solutions (CFS) in 2015 to lead the development of proteomic services in food and agriculture. Today, Lawry is speaking on how CFS' is addressing current gaps in the food industry regarding the accurate labeling of food allergens and regulators increasing expectations of "prevention" as the Food Safety and Modernization Act (FSMA) continues its phased deployment. |
