Ludwig Mies van der Rohe fostered modern architecture with his “skin and bones” style, introducing industrial steel, free-flowing open spaces and more. He epitomized minimalist architecture with his adoption of “less is more.” Decades later, his aphorism has been applied to every industry, and now consumers are saying less is more in their foods and beverages—what are popularly known as the clean-label and free-from markets.
