Amino acids are not just the building blocks of protein, but they can influence how a food or beverage tastes by contributing sweet, bitter or umami notes. The most well-known example is how glutamate enhances savory flavors by contributing the fifth taste, umami, but all amino acids are able to contribute certain tastes under the right circumstances.
