Gluten-free product formulation has become a growing area of attention for manufacturers as consumer’s demand for gluten-free products has increased. Although most consumers purchasing gluten-free products typically identify themselves as healthy-oriented, a few of the largest reasons for going gluten-free include wanting to lose weight, reduce cholesterol level or support healthy blood sugar levels. In addition, the U.S. and Canada have various health regulations regarding gluten product formulation and labeling that must be taken under consideration. Ultimately, gluten-free product formulation provides a unique opportunity for manufacturers to create healthy, nutrient dense products that consumers can enjoy by making healthy eating a priority and will benefit from the nutritional contents.
