Description:
Notions of weight management have changed subtly over the years. It has
shifted from the traditional health-related notion of "dieting" to become
a broader, more holistic wellness concept for consumers. Consumer data and
trends showing quality of life as an underlying driver for weight management
will be examined.
Additionally, from a product development perspective, formulation challenges
and ingredient strategies for weight management products will be discussed.
Speakers: Diane Carnell, Director of Research and Development for Kerry Ingredients &
Flavours, integrates the latest consumer insight and novel food ingredients
to develop consumer-desired bar and cereal applications for leading-edge food
companies. Prior to commencing her commercial career in 1998, Carnell lectured
on food science and food engineering for more than 20 years at a variety of
universities and colleges across the United Kingdom. She earned her bachelor's
degree in food technology from the National College of Food Technology at the
University of Reading, located in the United Kingdom
June Jo-Lee, Senior Strategic Analyst for The Hartman Group, is focused on
understanding food in relation to health, identity, taste and desire. Her
areas of expertise are ethnography, food in culture, cultural translation and
constructing the “good life.” Her previous work includes creative and strategic
planning at the agency side to implementation through wholesale, retail and
online channels. Jo-Lee received a master’s degree in east Asian studies from
Harvard University, as well as a master’s degree in Korean studies from Yonsei
University, and her bachelor’s degree in humanities honors from the University
of Texas. |
