Vegetarians Now Outnumbered but Market Growing CHICAGOOnly 2 percent of Americans are vegetarian, according to recent research released from Mintel (www.mintel.com). However, young adults between the ages of 18 and 24 are three times more likely to follow a vegetarian diet than the general population. Also, vegetarians are more likely to exercise regularly (70 percent) compared to nonvegetarians (38 percent) and are almost twice as likely to snack on healthy foods, according to Mintel. The company also reported the vegetarian food market in the United States is predicted to grow 61 percent by 2008, increasing total revenue to $2.5 billion. Refrigerated dairy milk alternatives, primarily soy milk, showed the strongest growth of all vegetarian food and drink from 2001 to 2003; frozen meat substitutes had the most significant growth in the vegetarian market food subcategory.
